A mouse in the house...

Biddy decided to get out the clay and sculpt a little scene while she was practicing her poem.
She is just about ready to recite it aloud to daddy without peeking!

Elijah projects...

The kids did a little water coloring- making "fiery chariots"



Ferdinand had fun telling the story of Elijah during snack with the help of our trusty puppet "sparky".
Sparky is a frequent learning time companion around here.

Prophet Elijah-Gluten free saints








After liturgy we made Gluten -free "sun" bread for snack time this week in remembrance of the Prophet Elijah.

The kids got really messy but even daddy enjoyed the snack.

Sweet Sun Bread

2 cups gf flour (I used Jules Gluten free)
4Tbs flax seed
2tsp bake soda
1/2 tsp bake powder
1 tsp vinegar (I use apple cider)
1/4 cup butter or palm shortening
1/4 cup sugar
3 tbs honey
3 eggs
1 cup greek yogurt
1 tsp lemon extract
1 tsp almond extract

Mix the dry ingredients, cut in shortening, mix in wet, beat 3 minutes.
Using wet hands shape batter into suns on greased cookie sheet or scoop into greased muffin tin.
Bake at 350 degrees for 14 minutes.

They are tasty with butter or plain. And the kids even ate the leftovers the next day- they were moist despite someone forgetting to put them away.

points of view...




A few snap shots from each side of my home...I have a tendency to dwell on the negative in life ...I'm really trying to remember that yes there is a ugly concrete jungle world out there full of unemployment , gossip and theft among other things...but God has graced me with a tiny little glimpse of paradise here too. I just have to choose the right point of view.
